Creamy sundried tomato chicken

Ingredients

  • 3-4 large chicken breasts

  • 2 cloves minced garlic

  • 1 tsp thyme

  • 1tsp red pepper flakes

  • 3/4 cup chicken broth

  • 1/2 cup heavy cream

  • 1/2 cup sundried tomatoes

  • 1/2 cup grated parmesan

  • fresh basil

Directions

  • preheat oven to 375F

  • season chicken with salt & pepper

  • sear in oven safe skillet over medium-high heat with olive oil. about 4-5 minututes per side then transfer to plate

  • cook garlic in pan for about a minute

  • stir in thyme, pepper flakes, chicken broth, & heavy cream. Cook for 5 minutes. stir in tomatoes & cheese

  • return chicken to skillet and spoon sauce over it

  • bake until chicken is cooked(15-18 min)

  • garnish with basil and cheese
