Gnocchi
Ingredients
1 1/2 lbs potatoes
flour
1 tbsp butter
1 egg
Directions
boil potatoes until soft in salt water (~15 min)
mash potatoes, removing skin, until smooth. do not over work
measure potatoes, and add an equal quantity of flour
make a mound of both on a clean counter, make a well, and add egg & a pinch of salt
mix ingredients into a ball and knead until smooth
let rest for 20 min
roll into ropes and cut 1 1/2 in sections, making grooves in the gnocchi with a fork
boil gnocchi for 2-3 minutes or until they float
