Gnocchi
Ingredients
- 1 1/2 lbs potatoes 
- flour 
- 1 tbsp butter 
- 1 egg 
Directions
- boil potatoes until soft in salt water (~15 min) 
- mash potatoes, removing skin, until smooth. do not over work 
- measure potatoes, and add an equal quantity of flour 
- make a mound of both on a clean counter, make a well, and add egg & a pinch of salt 
- mix ingredients into a ball and knead until smooth 
- let rest for 20 min 
- roll into ropes and cut 1 1/2 in sections, making grooves in the gnocchi with a fork 
- boil gnocchi for 2-3 minutes or until they float
