Gnocchi

Ingredients

  • 1 1/2 lbs potatoes

  • flour

  • 1 tbsp butter

  • 1 egg

Directions

  • boil potatoes until soft in salt water (~15 min)

  • mash potatoes, removing skin, until smooth. do not over work

  • measure potatoes, and add an equal quantity of flour

  • make a mound of both on a clean counter, make a well, and add egg & a pinch of salt

  • mix ingredients into a ball and knead until smooth

  • let rest for 20 min

  • roll into ropes and cut 1 1/2 in sections, making grooves in the gnocchi with a fork

  • boil gnocchi for 2-3 minutes or until they float
