Stuffed Bell Peppers

Ingredients

  • 1 (19oz) package sausage

  • 6-7 bell peppers

  • 3 plum tomatoes

  • 4 oz mushrooms

  • 2 tbsp parsley

  • 1 1/2 cups cooked quinoa

  • 1 tsp paprika

  • 1/2 cup Parmesan

  • 1/2 tsp salt

Directions

  • cook quinoa

  • preheat oven to 350 degrees

  • saute decased sausage, breaking it up. then set aside

  • chop pepper tops off, clean peppers, and dice top

  • cook onion and pepper tops in same pan about 5 minutes

  • add tomatoes and mushrroms cooking for 5 more

  • remove from heat, add parsley, quinoa, cheese, spices, and sausage, stirring to combine

  • stuff mixture into peppers

  • bake, covered, for 1 hour
