Stuffed Bell Peppers
Ingredients
- 1 (19oz) package sausage 
- 6-7 bell peppers 
- 3 plum tomatoes 
- 4 oz mushrooms 
- 2 tbsp parsley 
- 1 1/2 cups cooked quinoa 
- 1 tsp paprika 
- 1/2 cup Parmesan 
- 1/2 tsp salt 
Directions
- cook quinoa 
- preheat oven to 350 degrees 
- saute decased sausage, breaking it up. then set aside 
- chop pepper tops off, clean peppers, and dice top 
- cook onion and pepper tops in same pan about 5 minutes 
- add tomatoes and mushrroms cooking for 5 more 
- remove from heat, add parsley, quinoa, cheese, spices, and sausage, stirring to combine 
- stuff mixture into peppers 
- bake, covered, for 1 hour
