Stuffed Bell Peppers
Ingredients
1 (19oz) package sausage
6-7 bell peppers
3 plum tomatoes
4 oz mushrooms
2 tbsp parsley
1 1/2 cups cooked quinoa
1 tsp paprika
1/2 cup Parmesan
1/2 tsp salt
Directions
cook quinoa
preheat oven to 350 degrees
saute decased sausage, breaking it up. then set aside
chop pepper tops off, clean peppers, and dice top
cook onion and pepper tops in same pan about 5 minutes
add tomatoes and mushrroms cooking for 5 more
remove from heat, add parsley, quinoa, cheese, spices, and sausage, stirring to combine
stuff mixture into peppers
bake, covered, for 1 hour
